Blueberry Lemon Mocktail with whipped honey with lemon.

Overview


Bright blueberries and  Whipped Honey with Lemon come together in a sweet, citrusy syrup topped with ginger beer and soda water. Finished with fresh mint and lemon, this refreshing mocktail is a sip made for sunny days.

Instructions


For the Blueberry Lemon Syrup

  1. Add blueberries and water to a pot and bring to a simmer.  Allow to simmer for 10 minutes, mixing occasionally and beginning to break up the blueberries as they cook down. 
  2. Strain out the syrup and discard the remaining blueberry skins.Pour back into pot and add in honey.  Stir and bring back to a slight boil before letting it cool completely  
  3. Pour syrup into a resealable container and this can be stored in the refrigerator for 7-10 days. 

*Due to the natural pectin in blueberries, this syrup will naturally firm as it sits.  Simply whisk be 

For the mocktail

  1. Add the blueberry syrup to the bottom of the glass and mix until smooth (add a drop of warm water if needed). Fill the glass with ice and add ginger beer.  Gently mix until combined. 
  2. Top with soda water and garnish with mint leaves and a lemon slice

Ingredients

  • 1 ½ cup fresh or frozen blueberries
  • ½ cup Savannah Bee Whipped Lemon Honey
  • ¾ cup water
  • 2 Tablespoons Blueberry Syrup
  • 4oz Ginger Beer
  • 2 oz soda water
  • Mint and lemon wedge for garnish
