Honey Waffle Ice Cream Sandwiches
Whenever we make these honey waffles for breakfast, there are inevitably extra waffles that didn’t get eaten. Waste not, want not… fill the waffles with your favorite ice cream and enjoy these treats on a hot summer day!
Honey Waffle Ice Cream Sandwiches
(honey waffle + ice cream)
Makes 8 (6”round) waffles or 20 (4”square) waffles
What you need:
1 3/4 cups milk or preferred milk alternative
1/4 cup Savannah Bee Company Honey (we used Lavender Honey)
1/2 cup avocado oil
2 eggs
1 teaspoon vanilla
2 cups all purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
Your favorite ice cream
What to do:
To Serve: Enjoy waffles hot with a drizzle of honey, fresh whipped cream, and fresh berries. Or enjoy Waffle Ice Cream Sandwiches right from the freezer on a hot day!
Pro Tip!: You can dress up these waffles and make them any flavor you would like! Add 1 mashed ripe banana and 1 teaspoon of cinnamon, or 1/4 cup of sprinkles, or 2 tablespoons of cocoa powder, the possibilities are endless! They also freeze well!

What to do:
- Preheat waffle iron and set to desired darkness level. For us it’s setting 4 out of 5
- Make the waffle batter: Whisk together milk, honey, avocado oil, eggs, and vanilla. Add to the flour, baking powder, and salt. Mix to combine until any lumps are incorporated. Let batter rest for 5 minutes.
- Cook the waffles: For full round waffles, scoop a scant 1/2 cup of batter into a round 6” waffle iron. For smaller, square 4” waffles, scoop a scant 1/4 cup of batter into the same size waffle maker. Repeat until all batter is finished.
- To make Ice Cream Sandwiches: Leave ice cream out at room temperature for 10-15 minutes to allow for easy scooping. Scoop and press ice cream into the center of a waffle until desired thickness is achieved. Place a second waffle over the top and wrap in parchment or plastic wrap and leave in the freezer for at least 15 minutes to fully set.
