Honey Chicken Grain Bowl
(lemon honey-glazed chicken, farro, oranges + mint)
Serves 4
What you need:
¼ cup Savannah Bee Company Whipped Honey (we used Whipped Honey with Lemon)
2 tablespoons soy sauce
2 tablespoons fresh lemon juice
2 cups farro
2 pounds boneless, skinless chicken breasts
1 tablespoon ground turmeric
1 teaspoon ground ginger
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon freshly ground pepper
1 tablespoon olive oil
4 cups baby arugula
2 large navel oranges, peeled and cut into segments
¼ cup pickled red onions
¼ cup chopped pistachios
Fresh mint
What to do:
1. Wash Up!
2. Make the lemon honey glaze: Whisk together the honey, soy sauce, and lemon juice in a small bowl. Set aside.
3. Make the farro: Cook the farro in salted water according to package directions.
4. Cook the chicken: Pound the chicken to an even thickness, if necessary. Sprinkle the chicken with the turmeric, ginger, garlic powder, salt, and pepper. Heat the oil in a large skillet over medium-high heat. Cook the chicken 5 to 6 minutes on each side or until cooked through. Reduce the heat to medium-low. Add the lemon honey sauce and turn the chicken to coat. Cook for 1 to 2 minutes or until the sauce thickens slightly. Let the chicken rest before slicing.
To Serve: Divide the farro evenly between serving bowls. Top with the chicken, greens, orange segments, onion, pistachios, and mint. Drizzle the pan sauce over the chicken and farro.
Pro Tip: Look for pickled red onion in the produce department and pickle section of the grocery store. Or, make your own: Thinly slice one red onion and place in a jar or bowl. Bring 1 cup distilled vinegar, ½ cup water, 1 tablespoon Savannah Bee Company honey, and 1 teaspoon kosher salt to a boil. Pour the hot vinegar mixture over the onion slices and let cool to room temperature.
