Honey Bacon Jam
Sweet, spicy and salty. We love this just as a dip on your next charcuterie board or use it instead of all those basic type condiments on your next sandwich. We especially love this on crusty toasted bread with tomatoes and lettuce.
Honey Bacon Jam
(bacon, serrano pepper + honey)
Makes 8
What you need:
1 pound bacon, cut into 1” pieces
1 onion, finely chopped
4 shallots, minced
2 garlic cloves, minced
½ serrano pepper, minced
½ cup packed brown sugar
¼ cup Savannah Bee Company Honey (we used Acacia Honey)
1/3 cup apple cider vinegar
What to do:
1. Wash Up!
2. Cook Bacon: In a deep skillet, cook bacon until crispy and drain the fat, reserving 1 tablespoon of bacon fat. Keep bacon to add in later.
3. Finish Jam: In the same pan, caramelize the onions and shallots in the reserved bacon fat, over low heat. Stir in garlic and serrano pepper and cook until fragrant. Add the sugar, the Savannah Bee Company Acacia Honey, and apple cider vinegar. Cook over low heat until the liquid has been reduced and the onions are jammy. Stir cooked bacon back into jam.
To Serve: Enjoy at room temperature or right out of the fridge.
Pro Tip: Do yourself a favor and replace the bacon with a spoonful of honey bacon jam in your bacon, egg and cheese sandwich.
Table Talk: Sweet salty or sweet spicy?
