Known for its distinct clarity and resistance to crystallization, this single-varietal gem comes from honey harvested from the forests of black locust trees that grow from Northern Italy to Ukraine.
Acacia honey’s high fructose content helps it remain in a liquid state—some call it “white water.”

"The extremely light, pale yellow is the first hint of the unique qualities of this honey. It's like the color of high quality light cooking oil. The flavor is mildly sweet but strong enough to add it's unmistakable presence to whatever you may enjoy it with. I think it would be an excellent sweetener for coffee or tea, but I simply use it on a freshly toasted English muffin or whole wheat bagel. Instead of overpowering the breakfast bread like a rich jelly or jam, it's the perfect enhancement of sweet and very light but noticeable vanilla like flavor."
