Rhubarb Gin Cocktail
This pink-hued fizzy drink garnished with tiny edible flowers couldn’t be more gorgeous. Our honey is just the right ingredient to tame the tartness of the rhubarb. Topped off with sparkling wine, it’s the perfect patio drink for the season.
Rhubarb Gin Cocktail
(honey-rhubarb syrup + gin + sparkling wine)
Serves 1
What You Need:
For the honey rhubarb syrup:
3 cups sliced rhubarb
1 cup water
½ cup Savannah Bee Company Honey (we used Black Sage Honey)
For the cocktail:
1 tablespoon Savannah Bee Company Honey (we used Black Sage Honey)
3 tablespoons honey rhubarb syrup
3 tablespoons gin
1 tablespoon fresh lemon juice
1 egg white
Ice cubes
¼ cup sparkling wine
Edible flowers for garnish
What to do:
1. Wash Up!
2. Make the honey rhubarb syrup: Combine the rhubarb, water, and honey in a medium saucepan. Bring to a boil. Reduce the heat and simmer for 10 minutes or until the rhubarb falls apart. Pour the syrup through a fine wire mesh strainer into a measuring cup or jar, pressing the rhubarb solids with a spatula to extract as much liquid as possible. Set aside and cool.
3. Finish the cocktail: Combine the honey, 3 tablespoons of the rhubarb syrup, gin, lemon juice, and the egg white in a cocktail shaker (without ice.) Shake vigorously to foam the egg white. Add ice and shake until thoroughly chilled.
To Serve: Strain the cocktail into a coupe glass or other cocktail glass. Top with sparkling wine. Garnish with edible flowers.
Pro Tip: If you can’t find fresh rhubarb, look for it in the freezer section of your grocery store.
