No Bake Chocolate Honey Cookies
These no-bake cookies come together in minutes and are ready to go in under 30 minutes from start to finish with no fuss. What these cookies lack in beauty, they make up for in flavor!
No Bake Chocolate Honey Cookies
(rolled oats, bittersweet chocolate + whipped honey)
Makes 24 cookies
What you need:
1/2 cup unsalted butter
1/2 cup milk
3 tablespoons Dutch process or unsweetened cocoa powder
1/2 cup sugar
1/2 cup Savannah Bee Company Whipped Honey (we used Whipped Honey Original)
1 cup creamy nut butter of your choice
1 teaspoon vanilla extract
1/4 teaspoon sea salt
1 (3 ounce) bar of bittersweet baking chocolate, chopped, divided (can sub chips)
3 cups quick oats
What to do:
1. Wash Up!
2. Heat the honey: Prepare a baking sheet with parchment paper. In a medium saucepan over melt butter. Once melting, add milk, cocoa powder, sugar and honey. Once melted, increase heat to medium high and cook at a boil while stirring constantly for 1-2 minutes. Remove from heat.
3. Make the dough: Away from the heat, add peanut butter, vanilla, salt, 2 ounces of chocolate. Stir well then add 3 cups quick oats and combine thoroughly.
4. Make the cookies: Using a cookie scoop or a tablespoon, quickly transfer warm dough to lined baking sheets. Press or roll in remaining chopped chocolate or chocolate chips as desired. Cool in the fridge for at least 30 minutes before eating.
To Serve: These make great handmade gifts around the holidays. A thoughtful note is the only addition needed!
