Honey-Basil Lemonade Popsicles
This is our grown-up version of a childhood treat. A basil-infused honey simple syrup gives the lemonade a surprising flavor that’s wonderful when frozen into popsicle form.
Honey-Basil Lemonade Popsicles
(honey-kissed lemony ice pops)
Serves 12
What you need:
½ cup Savannah Bee Company honey (we used Wildflower Honey)
½ cup fresh basil leaves
2½ cups water, divided
1 cup fresh lemon juice
12-count popsicle mold (each holds about 1/3 cup)
What to do:
1. Wash Up!
2. Make the Honey-Basil Simple Syrup: Combine the honey, basil, and ½ cup water in a small saucepan. Simmer for 1 minute or until the honey dissolves. Remove from the heat and let stand for 10 minutes to allow the basil to infuse. Strain the syrup and let cool.
3. Make the Lemonade: Stir together the lemon juice, remaining 2 cups water, and the simple syrup. Pour the lemonade into the wells of a 12 (1/3-cup) popsicle mold. Insert wooden sticks and place in the freezer. Freeze overnight or until the popsicles are firm.
To Serve: Dip the popsicle mold into warm water to release the popsicles. Serve immediately.
