Chocolate Sandwich Cookies
Are you a chocoholic? If so, you’re going to love these sandwich cookies. We fill brownie-like cookies with our chocolate whipped honey for a treat that’s out of this world.
Chocolate Sandwich Cookies
(brownies in sandwich cookie form, filled with whipped chocolate honey)
Serves 12
What you need:
1 cup all-purpose flour
3 tablespoons unsweetened cocoa powder
1¼ teaspoons baking powder
2 (4-ounce) semisweet chocolate bars, chopped
1/3 cup salted butter
2 large eggs
1 cup sugar
1 teaspoon vanilla extract
¼ cup Savannah Bee Company® Whipped Honey with Chocolate
What to do:
1. Wash Up!
2. Make the Cookie Dough: Preheat the oven to 350°F. Line two baking sheets with parchment paper. Whisk together the flour, cocoa powder, and baking powder in a small bowl. Melt the chocolate and butter together over a double boiler. Beat the eggs, sugar, and vanilla for 5 minutes until pale and thickened. Add the melted chocolate to the egg mixture along with the flour mixture and beat until combined. (Dough will be thick.)
3. Bake the Cookies: Scoop the dough onto the prepared baking sheet into 24 mounds. Bake for 12 to 14 minutes or until the cookies are set, switching the pans halfway through. Remove the cookies from the pans to wire racks to cool completely.
4. Fill the Sandwich Cookies: Spread about 1 teaspoon whipped honey onto the flat sides of 12 cookies. Top with the remaining 12 cookies, flat sides onto the honey.
To Serve: Divide the cookies among serving plates.
