Butterfly pea flower tea makes this honey- and ginger-infused drink the most beautiful blue, but the magic happens when you add the citrus.
The Pollinator: A Butterfly Pea Flower Cocktail

What you need:
For the honey-ginger syrup:
½ cup Savannah Bee Company Honey
½ cup water
1 (1-inch) piece ginger, peeled and sliced

For the cocktail:
4 cups water
2 tablespoons butterfly pea flower tea
½ cup honey-ginger syrup
6 tablespoons (3 ounces) mezcal
2 tablespoons (1 ounce) elderflower liqueur (such as St. Germain)
½ cup fresh lime juice
Edible flowers and Savannah Bee Company Bee Pollen for garnish

6 tablespoons (3 ounces) mezcal
2 tablespoons (1 ounce) elderflower liqueur (such as St. Germain)
½ cup fresh lime juice

What to do:
1. Wash Up!
2. Make the honey-ginger syrup: Combine the honey, water, and ginger in a small saucepan over medium-high heat. Bring to a boil. Reduce the heat to low and simmer for 10 minutes. Pour the syrup through a fine mesh strainer into a jar and let cool. Refrigerate until ready to serve.
3. Make the tea: Bring 4 cups of water to a boil. Add the butterfly pea flower tea and let steep for 10 minutes. Strain, and let cool. Refrigerate until ready to serve.
4. Make the cocktail: Combine the honey-ginger syrup, mezcal, liqueur, and lime juice in an ice-filled cocktail shaker. Shake vigorously until chilled.
To Serve: Place a king ice cube in each of two rocks glasses. Fill each glass half-full with the butterfly pea flower tea. Strain the honey-ginger syrup mixture into the glass and watch as the color changes from blue to fuchsia. Garnish with edible flowers and bee pollen.
