Queen Bee Salad
Jen Aniston could never. We heard on the Friends set Jen ate the same salad everyday… and if it was anything like this, she’d still be having the salad daily.
Queen Bee Salad
(quinoa, cucumbers, red onion, feta + honey)
Serves 6
What you need:
2 cups cooked quinoa
1 can (15oz) chickpeas, rinsed and drained
1 cup cucumbers, diced
1/3 cup red onion, diced small
1/2 cup mint, chopped
1/2 cup parsley, chopped
1/2 cup roasted and salted pistachios, chopped
1/2 cup crumbled feta cheese
sea salt and pepper to taste
2 lemons, juiced
1/4 cup avocado oil
1/4 cup Savannah Bee Company Honey (we used Tupelo Honey) or for an extra kick, use Savannah Bee Company Hot Honey!
What to do:
1. Wash Up!
2. Create Salad Base: Combine cooked quinoa, chickpeas, cucumber, red onion, mint, parsley, pistachios, and feta cheese.
3. Prepare Dressing: In a small bowl, whisk lemon juice, avocado oil, and honey.
4. Finish Salad: Toss dressing throughout the salad and garnish with any extra mint or parsley.
To Serve: Serve chilled alone or with a grilled protein of your choice.
Pro Tip! This salad is best prepared a few hours ahead of eating to allow all the flavors to combine. Prep it at the beginning of the week and enjoy a delicious lunch or dinner just when you need it.
