Huevos Rancheros
A classic south of the border breakfast with a sweet honey hot sauce finish.
Huevos Rancheros
(tortillas, eggs, beans, Ranchero sauce + honey hot sauce)
Makes: 2 servings
What you need:
For the Ranchero Sauce:
3 ripe tomatoes (Roma or vine-ripened work beautifully), quartered
1 small white onion, chopped
1 clove garlic
1 small jalapeño pepper (seeded for less heat)
1 tablespoon avocado or olive oil
Salt to taste
Optional: squeeze of lime and a drizzle of Savannah Bee Company Honey for balance
4 corn tortillas
Avocado or olive oil
1 cup cooked and lightly smashed black beans, warmed (canned is fine)1 avocado, sliced
6 eggs
Cilantro, chopped
Jalapeno, sliced
Kosher salt and coarsly ground black pepper to taste

What to do:
1. Wash Up
2. Make Ranchero Sauce: In a blender, place the tomatoes, onion, garlic, and jalapeno. Blend until smooth (add a touch of water if the mixture is too thick). Heat olive oil in a skillet over medium heat. Pour in the blended mixture and cook for 8–10 minutes, stirring occasionally, until slightly thickened. Season with salt and pepper, a squeeze of lime and a tiny drizzle of honey to round it out. Reduce heat and keep warm while making the rest of the dish.
3. Warm the Tortillas: Toast corn tortillas in a dry skillet until soft with a little char. Remove and keep warm.
4. Fry the Eggs: In the same skillet, add enough oil to fry the eggs sunny-side-up or over easy. Season with salt and pepper
To Serve: Place 2 tortillas on each plate. Spoon warm black beans over each, then top each with the fried eggs. Gently ladle the fresh ranchero sauce on top. Garnish with avocado, cilantro, and jalapeno. Generously finish with Honey Hot Sauce.
