Honey Chicken Salad
This quick lunch will keep you buzzing through the rest of your day! Anything we can create with rotisserie chicken is always a hit in the hive.
Honey Chicken Salad
(rotisserie chicken, salted almonds, stone ground mustard + honey)
Serves 6
What you need:
1/2 cup mayonnaise
1/4 cup stone ground Dijon mustard
2 teaspoons apple cider vinegar
1/4 cup Savannah Bee Company Honey (we used Wildflower Honey)
1 store bought rotisserie chicken, skinned and pulled
1 cup red grapes, quartered
1 cup roasted and salted almonds, chopped
1 stalk celery, diced
2 stems parsley, roughly chopped
Kosher salt
Freshly ground black pepper
What to do:
1. Wash Up!
2. Make the sauce: In a large bowl whisk together the mayonnaise, mustard, apple cider vinegar and honey.
3. Finish the chicken salad: Stir pulled chicken, grapes, almonds and celery into the mayonnaise honey mixture. Salt and pepper to taste.
To serve: Chill and serve over arugula, on thick toasted sourdough slices, in a wrap, our our favorite…with a hunk of Savannah Bee Company® Raw Honey Comb!
