Banana Spice Muffins
Those scary old bananas on the counter turn into delicious morning-saving muffins in a heartbeat.
Banana Spice Muffins
(banana, cinnamon, nutmeg + honey)
Makes 12 muffins
What you need:
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ginger
1/2 teaspoon salt
3 very ripe bananas, mashed
1/4 cup (1/2 stick) unsalted butter, melted
1/3 cup Savannah Bee Company Honey (we used Acacia Honey)
1 egg
1 cup milk
2 teaspoon vanilla extract
Optional addition: 1/2 cup chocolate chips, 1 rough chopped banana, 1/2 cup chopped nuts… make them your own!
What to do:
1. Wash Up!
2. Preheat the oven to 400º F and line 12-cup muffin tin with paper liners.
3. Make the muffin batter: In a large bowl, combine the flour, baking powder, cinnamon, nutmeg, ginger, and salt. Set aside. In another bowl thoroughly combine mashed bananas, melted butter, honey, egg, milk, and vanilla. Add dry ingredients into the wet ingredients and mix with a spatula until just combined. Fold in the optional additions if desired. Scoop roughly 2 ounces (1/4 cup) of batter into each muffin tin.
4. Cook the muffins: Cook for 12-18 minutes or until a toothpick comes out clean. Remove and cool.
To Serve: Serve warm with a Whipped Cinnamon Honey Butter.
Pro Tip: These can be wrapped and frozen for up to six months and reheated quickly for a great weekday breakfast on the go.
