Spicy Peanut Noodles
These easy peanut sesame noodles have a little bit of everything to satisfy whatever craving you may have. They’ve got a hint of spicy sweetness from our hot honey, loads of umami from soy sauce and peanut butter, and lots of crunch and texture from a rainbow of veggies.
Spicy Peanut Noodles
(spaghetti + stir fry veggies + hot honey peanut sauce)
Serves 8
What you need:
½ cup creamy peanut butter
½ cup low-sodium soy sauce
¼ cup Savannah Bee Company Hot Honey
2 tablespoons toasted sesame oil
2 tablespoons rice vinegar
1 inch piece ginger, peeled and grated
3 cloves garlic, grated
1 (16-ounce) package spaghetti
2 cups snow peas, sliced
2 large carrots, cut into matchsticks
2 medium-size red bell peppers, thinly sliced
2 ½ cups shredded red cabbage
4 green onions, sliced
Sesame seeds and crushed peanuts for garnish
What to do:
1. Wash Up!
2. Make the sauce: Whisk together the peanut butter, soy sauce, hot honey, sesame oil, vinegar, ginger, and garlic in a large bowl. Set aside.
3. Cook the pasta: Bring a large pot of salted water to a boil. Add the spaghetti. Cook for 8 minutes or until almost al dente. Add the snow peas, carrots, and bell pepper, and cook for 1 more minute to soften the vegetables. Drain the pasta and vegetables and rinse with cold water to cool.
4. Mix the noodles: Add the noodles and vegetables to the bowl with sauce. Add the cabbage and most of the green onions (reserve some for garnish.) Toss until the noodles and vegetables are coated.
To Serve: Sprinkle the remaining green onions on top and garnish with sesame seeds and peanuts. Serve immediately or refrigerate until ready to serve.
Pro Tip: As is, this is a great veggie-packed side dish. To make it a main dish, add some shredded rotisserie chicken or seared tofu. It’ll be enough for 4 main dish servings.
