Saltine Cracker Toffee
(saltines + brown sugar honey toffee + chocolate)
Serves 10 to 12
What you need:
40 saltine crackers
1 cup unsalted butter
½ cup Savannah Bee Company Honey (we used Orange Blossom)
½ cup firmly packed light brown sugar
2 cups dark chocolate chips
2 tablespoons Savannah Bee Company Bee Pollen
What to do:
1. Wash Up!
2. Prep the crackers: Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper or aluminum foil and coat with cooking spray. Arrange the saltines in a single layer on the bottom of the pan to cover as completely as possible.
3. Make the toffee: Combine the butter, honey, and brown sugar in a medium saucepan over medium heat. Bring to a boil and boil for 4 to 6 minutes. Pour the mixture carefully over the saltines to cover completely. Spread the hot butter mixture using the back of a spoon or an offset spatula. Bake for 5 to 6 minutes. While still hot, sprinkle the chocolate chips evenly over the crackers and return to the oven for another 2 to 3 minutes or until melted. Spread the melted chocolate to coat using a spoon or offset spatula. Let stand for about 5 minutes before sprinkling with bee pollen.
To Serve: Let the toffee stand at room temperature or transfer to a refrigerator to cool and harden. Break into large pieces and serve.
Pro Tip: When you’re choosing a chocolate chip, we recommend Guittard or Ghirardelli because they melt so smoothly!
