Korean Ground Beef Tacos

Korean Ground Beef Tacos
(flour tortillas + ground beef + kimchi slaw)
Serves 4
What You Need:
For the kimchi slaw:
¼ cup mayonnaise
2 teaspoons lime juice
1 teaspoon your favorite Savannah Bee Company Honey (we used Acacia Honey)
1½ cups sliced red cabbage
1 cup refrigerated kimchi, chopped
For the tacos:
1 pound ground chuck
3 tablespoons low-sodium soy sauce
3 tablespoon your favorite Savannah Bee Company Honey
1 tablespoon gochujang (fermented chile paste)
1 tablespoon dark sesame oil
2 cloves garlic, minced
1 teaspoon grated fresh ginger
8 soft taco-size flour tortillas, charred
Sliced green onions and lime wedges for garnish
What to do:
1. Wash Up!
2. Make the kimchi slaw: Whisk together the mayonnaise, lime juice, and honey in a medium bowl. Add the cabbage and kimchi and toss well to coat. Set aside.
3. Make the beef filling: Brown the ground beef in a large skillet over medium-high heat. Drain, if necessary. Whisk together the soy sauce, honey, gochujang, sesame oil, garlic, and ginger. Add to the beef and cook until the sauce thickens.
To Serve: Divide the beef and slaw evenly between the tortillas. Top with green onions and serve with lime wedges.
