Quinoa Salad with Honey Lime Dressing

A fresh side dish that’s packed with a rainbow of vegetables and topped with a dreamy dressing. 

Quinoa Salad with Honey Lime Dressing
(grains, beans, colorful vegetables + honey lime dressing)
serves 6

What you need:
1 cup uncooked quinoa
1 1/2 cups black beans, rinsed and drained
1/2 cup grilled corn, cut off the cob
1 red bell pepper, diced
1/4 cup diced onion
1 jalapeño, deseeded and minced
1/4 cup chopped cilantro

Dressing:
1 1/2 tablespoons olive oil
3 tablespoons Savannah Bee Company Honey (we used Wildflower Honey
2 teaspoons lime zest
1/3 cup lime juice
1 teaspoon chili powder
3/4 teaspoon ground cumin
1/2 tsp salt

What to do:
1. Wash Up!

2. Prepare Quinoa: Rinse the quinoa and cook according to package instructions. Let it cool to room temperature.

3. Mix All Salad Ingredients: In a large bowl, combine cooled quinoa, black beans, grilled corn

4. Make Dressing: In a small bowl whisk together the dressing ingredients. Pour over the salad and toss everything together.

To Serve: Garnish and enjoy cold with extra chopped parsley.

Pro Tip: Want a little heat? Serve with a couple of shakes of  Savannah Bee Company® Honey Hot Sauce!
