Banana Bread Pancakes
Make mom or dad feel special when you serve them these honey-drenched banana and pecan pancakes for breakfast in bed.
Banana Bread Pancakes
(pecan-studded banana pancakes with honey drizzle)
Serves 4
What you need:
2 large very ripe bananas, mashed (1 cups)
2 large eggs
1 cup whole milk
3 tablespoons Savannah Bee Company honey (we used Sourwood Honey)
1 teaspoon vanilla extract
1¾ cups all-purpose flour
2 teaspoon baking powder
¼ teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon nutmeg
½ teaspoon salt
¾ cup toasted chopped pecans
¼ cup butter
Sliced bananas and toasted pecans for topping
Savannah Bee Company® Sourwood Honey or your favorite Savannah Bee Company® honey for serving
What to do:
1. Wash Up!
2. Make the Batter: Stir together the bananas, eggs, milk, honey, and vanilla in a large bowl. Stir together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a separate bowl. Add the flour mixture to the banana mixture. Stir until the batter is smooth. Fold in the pecans.
3. Cook the Pancakes: Melt a little of the butter in a large skillet or griddle over medium-high heat. Pour ½-cupfuls of batter into the skillet and cook until small bubbles form around the edges and the bottom is browned. Flip the pancakes and cook 1 minute longer or until the other side is browned and the pancakes are cooked through. Repeat with the remaining butter and batter.
To Serve: Divide the pancakes between serving plates. Top with sliced bananas and toasted pecans and drizzle with honey.
