Lemon and Clove Cookies
These lemon and clove cookies will fill your house with the smells of the holidays while they bake. Try to not belt out that Mariah Carey song while you’re waiting for these cookies to come out of the oven, we dare you.
Lemon and Clove Cookies
(lemon zest + whipped honey with lemon)
Makes 24 cookies
What you need:
7 tablespoons unsalted butter, softened
1/2 cup Savannah Bee Company Whipped Honey (we used Whipped Honey with Lemon)
1/2 cup sugar
1 egg yolk
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon ground clove
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 1/2 cups flour
For Rolling Mixture:
1 cup turbinado sugar
1/4 teaspoon ground cloves
What to do:
1. Wash Up!
2. Make the dough: In the bowl of a mixer, cream together butter, honey and sugar until fluffy. Scrape down the sides and mix in vanilla, egg, lemon zest and juice. Scrape sides to the bottom and mix again. Mix in flour, salt, baking powder, baking soda and flour until just combined. Cover the bowl and refrigerate at least 1 hour.
3. Make the cookies: Preheat oven to 350°F and prepare two cookie sheets with parchment. Using a small (1-2 tablespoon) cookie scoop, scoop out balls of dough and flatten slightly before coating in the sugar and clove mixture. Bake for 9-11 minutes or until the cookies are cracked on top. Cool cookies for 3-4 minutes before moving to a cooling rack.
To Serve: Arrange beautifully on a plate to share with friends and family!
Pro Tip: Instead of refrigerating your entire mixing bowl, you can plastic wrap your dough into a disc and stack multiple types of dough.
