Honey Snickerdoodle Cookies
(ground cinnamon + cinnamon whipped honey)
Makes 36 cookies
What you need:
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, slightly softened
1/2 cup Savannah Bee Company Whipped Honey (we used Whipped Honey with Cinnamon)
1 1/3 cup sugar, divided
1 egg yolk
1 teaspoon vanilla extract
2 tablespoons cinnamon
What to do:
1. Wash Up!
2. Make the dough: Preheat the oven to 350°F and prepare two baking sheets with parchment. In a large bowl, mix together flour, cream of tartar, baking soda, and salt. Set aside. In the bowl of a stand mixer, cream together butter, honey and 1 cup sugar until light and fluffy. Scrape the sides and add eggs and vanilla to combine. Add dry ingredients to wet ingredients and mix well.
3. Bake cookies: In a small bowl combine remaining 1/3 cup sugar and cinnamon. Using a cookie scoop (about 2 tablespoons) create balls with the cookie dough and roll them thoroughly through the cinnamon sugar mixture. Place on the cookie sheet leaving 1 inch between cookies. Bake for 9-10 minutes. Let cool for 2-4 minutes before moving to a cooling rack.
To Serve: These make a great homemade gift around the holidays! Especially if you give them a bag of cookies and a small jar of our delicious Cinnamon Whipped Honey!
Pro Tip: To add an extra cinnamon punch, dust warm cookies with any remaining sugar and cinnamon rolling mixture.
FUN FACT: Did you know that the origin of the name snickerdoodle is from the Dutch name translating to “snail dumpling?” Let’s stick with Snickerdoodle.
