Everything Oatmeal Cookies
The oatmeal cookies that gave us a run for our money… but man, they’re delicious! Packed with dried fruit and chocolate chips, you’ll never eat just one of these honey oatmeal cookies!
Everything Oatmeal Cookies
(rolled oats, dried fruit, chocolate chips + whipped cinnamon honey)
Makes 16 (2 ounce) cookies
What you need:
1/2 cup (1 stick) butter, room temperature
1/2 cup packed brown sugar
1/3 cup Savannah Bee Company honey (we used Cinnamon Whipped Honey)
1 egg
1 teaspoon vanilla
1/4 teaspoon cinnamon
1 cup + 2 tablespoons all-purpose flour
1 1/2 cups rolled oats, pulsed lightly in a food processor
1/2 teaspoon baking soda
1/4 teaspoon cornstarch
1/4 teaspoon salt
1 1/4 cup assorted dried fruit (we used dried cherries and cranberries)
1/4 cup dark chocolate chips
1/4 cup chopped nuts (we use chopped walnuts and pistachios)
What to do:
- Preheat oven to 375º F. Line a baking sheet with parchment paper and set aside.
- Make dough: In the bowl of a standing mixer fitted with a paddle attachment, cream together butter, brown sugar, and whipped honey until fluffy. Add in egg and vanilla and mix until fluffy again. In a separate bowl whisk together cinnamon, flour, pulsed oats, baking soda, corn starch, and salt. Add dry ingredients to the butter mixture and mix JUST until combined. Do not overmix. Add the dried fruit, chocolate chips, and nuts. Mix JUST until combined.
- Bake cookies: Scoop out 2 tablespoon balls (1 ounce scoop) onto the prepared baking sheet leaving roughly 2-inches between cookies. Wet your fingers and press the tops of the cookie dough balls so that they are not domed. Bake for 10-11 minutes until the edges are brown and the centers are still lighter in color. Let rest on the tray for 5 minutes before you move the cookies to a cooling rack.
Pro tip! You can make cookie dough balls and freeze them to have a few hot cookies whenever you’d like! Bake frozen dough balls at 375ºF for 10-12 minutes!
