Black-Eyed Pea Burgers
Probably the best vegetarian burger you will ever eat! The addition of the sweet heat of the Hot Honey Saucey Sauce and pickle crunch of the chow chow takes it to the next level. Enjoy with or without a bun…we prefer with.
Black-Eyed Pea Burgers
(a vegetarian burger, southern relish + Hot Honey Saucey Sauce)
Serves 6
What you need:
1 (14oz) can black-eyed peas, drained and rinsed
1 (14oz) can black beans, drained and rinsed
1 tablespoon avocado oil
3/4 cup finely chopped bell pepper (about 1/2 of a bell pepper)
1 cup finely chopped yellow onion (about 1/2 of a large onion)
4 garlic cloves, minced
1/4 cup cooked quinoa (prepared according to package instructions)
1 1/2 teaspoons ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
1/2 cup breadcrumbs
1/2 cup feta cheese
2 large eggs
1 tablespoon Worcestershire sauce
1 tablespoons BBQ Sauce
1 tablespoon Savannah Bee Company Honey (we used our Savannah Bee Company Hot Honey)
Salt and pepper to taste
6 soft burger buns, toasted if you like…we don’t like.
Hot Honey Saucey Sauce (recipe to follow)
Chow Chow (store bought)
Hot Honey Saucey Sauce:
2 tablespoons Savannah Bee Company® Hot Honey
1/4 cup prepared barbecue sauce (use your favorite)
2 tablespoons mayonnaise
1 tablespoon stone ground mustard
1 tablespoon Worcestershire sauce
What to do:
1. Wash Up!
2. Prep the Beans: Preheat the oven to 325°F. To thoroughly dry the black-eyed peas and black beans, spread evenly onto a lined baking sheet and bake for 15 minutes.
3. Start the Burger Mash: Heat oil over medium heat and sauté onions, peppers, and garlic until soft. Transfer to a large mixing bowl. Add cooked quinoa, cumin, chili powder, garlic powder, smoked paprika, breadcrumbs, cheese, eggs, Worcestershire, barbecue sauce, salt and pepper. Combine thoroughly and then add the beans. Using a fork, mash the mixture together, leaving some large chunks of black beans and black-eyed peas.
4. Make the Patties: Using 1/3 to 1/2 cup of mixture to shape into 6 patties.
5. Bake the Patties: Preheat oven to 375°F. Place patties on a lined baking sheet. Bake 10 minutes on each side (alternately, fry each patty in oil).
6. Prep the Sauce: In a small bowl, stir together Hot Honey, barbecue sauce, mayonnaise, mustard and Worcestershire sauce.
To serve: Coat the bottom bun with a generous amount of Hot Honey Saucey Sauce, stack burger on top, add more Hot Honey Saucey Sauce and Chow Chow. Add top bun and give it a slight push down and serve immediately.
