Strawberry and Goat Cheese Crostini
We’ve created the perfect warm-weather appetizer that’s both easy and impressive. A honey balsamic drizzle brings out the sweetness of ripe red strawberries and complements tangy goat cheese. A garnish of basil leaves and edible flowers make these entertaining-worthy.
Strawberry and Goat Cheese Crostini
(ripe strawberries + creamy goat cheese + honey balsamic drizzle)
Serves 12 (makes 24)
What You Need:
1 (12-ounce) French baguette, sliced
Olive oil cooking spray
2 tablespoons Savannah Bee Company Honey (we used Orange Blossom Honey), plus more for drizzling
2 tablespoons balsamic vinegar
2 (3-ounce) logs goat cheese, at room temperature
2 cups quartered strawberries
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
Fresh basil leaves
Edible flowers
What to do:
1. Wash Up!
2. Toast the bread: Preheat the broiler. Arrange the baguette slices on a rimmed baking sheet. Coat with cooking spray. Broil for 1 to 2 minutes or until golden. Turn the slices over and coat with more cooking spray. Broil for another 1 to 2 minutes or until toasted.
3. Make the honey-balsamic drizzle: Whisk together the honey and balsamic vinegar in a small bowl.
4. Finish the crostini: Spread the goat cheese evenly on one side of each crostini. Top evenly with strawberries.
To Serve: Transfer the crostini to a serving platter. Drizzle with the honey balsamic and extra-virgin olive oil. Sprinkle with salt and pepper and top with basil and edible flowers. Drizzle with more honey. Serve immediately.
Pro Tip: The honey-balsamic drizzle can also double as an easy salad dressing.
