Honey Poached Apricots
A quick dessert that will elevate any stone fruit, pear or apple.
Honey Poached Apricots
(white wine, honey, thyme, apricots + orange zest)
Serves 6
What you need:
1 ½ cups white wine
1 ½ cups Savannah Bee Company (we used Orange Blossom Honey)
Zest and juice of 1 orange
6 sprigs fresh thyme, plus more for garnish
½ teaspoon salt
7 medium-sized slightly underripe apricots, pitted and cut into thick slices
Whipped cream or Ice Cream for serving (optional)
What to do:
1. Wash Up!
2. Make Poaching Liquid: In a large high-sided skillet over medium heat, stir together wine, honey, zest, thyme and salt. Bring mixture to a boil while stirring to dissolve honey. Reduce heat and simmer for 5 minutes.
3. Poach Apricots: Carefully place the apricot slices into the hot syrup. Return to a simmer and gently cook, uncovered until the apricots are slightly tender but not falling apart (about 3 -4 minutes). Use a slotted spoon to remove the apricots to a serving dish. Continue to simmer syrup until thickened (about 10 minutes). Stir in orange juice.
To Serve: Serve poached fruit spooned over ice cream, or with a dollop of whipped cream on top. Garnish with thyme leaves.
