Honey Donut Bites
Of course you think you’ll eat just one and then you realize the whole plate is gone and your fingers are sticky from honey and you are the happiest you’ve been all week. Honey is like that.
Honey Donut Bites
(bite-sized puffs of dough, cinnamon sugar + honey finish)
Makes about 36 depending on how you scoop them (12 servings)
What you need:
For Donuts:
2 cups all-purpose flour
1 tablespoon baking powder
¾ teaspoon salt
¼ teaspoon cinnamon
¾ cup cold milk
¼ cup Savannah Bee Company honey (we used Black Sage), plus more for drizzling at finish
¼ cup vegetable or avocado oil plus more for frying (you’ll need 2” of oil in a saucepan for frying)
1 egg
1 teaspoon vanilla extract
For Cinnamon Sugar:
2 teaspoons cinnamon
½ cup sugar
Add ingredients to a wide rimmed shallow bowl and stir together.
What to do:
1. Wash Up!
2. Mix Dry Ingredients: In a medium mixing bowl, whisk together the flour, baking powder, salt and cinnamon. Set aside.
3. Mix Wet Ingredients: In a medium mixing bowl, whisk together the milk, honey, ¼ cup oil, egg and extract
4. Finish Batter: Stir wet ingredients into the dry ingredients and mix until just combined. Set aside.
5. Cook Donuts: In a medium saucepan, add oil to 2-inches up the side and heat until 350º F. Line a baking tray with paper towels. Have cinnamon sugar at the ready. Working in batches but not overcrowding the pan, use a small scoop or two spoons to work batter into a small ball (about ½ to 1-inch in diameter) and drop into the hot oil. Cook, turning over as needed, until golden brown. Remove with a slotted spoon to the paper towel lined tray. Will cool enough to handle, roll each donut in the cinnamon sugar. Continue process until all donut bites are fried.
To Serve: Serve warm with an extra drizzle of honey or honey on the side for dipping.
