Grilled Artichokes and Honey
We just upped your grill game.
Grilled Artichokes and Honey
(fresh artichokes, lemon, garlic + honey)
Serves 4
What you need:
2 artichokes, halved
Juice of 1 lemon
6 tablespoons avocado oil
4 cloves Honey Roasted Garlic, mashed with a fork
Salt and pepper to taste
3 tablespoons Savannah Bee Company® Rosemary Honey to finish
What to do:
1. Wash Up!
2. Prepare Artichokes: Cut the thorny tips off your artichokes using kitchen shears and wash with cold water (be sure to get between the petals to remove as much dirt as possible.) Use a vegetable peeler to remove the outer layer of skin on the stalks. Cut clean artichokes in half lengthwise and use a melon baller or a small spoon to remove the choke (fuzzy section which sits on top of the sweetheart).
3. Steam Artichokes: In a large pot, bring 2-3 inches of water with the juice of one lemon to a boil. Place artichokes in the pot with lid on and steam for 25-30 minutes with water at a boil until a fork is easy to insert into the stalk.
4. Season Artichokes: Place steamed artichokes on a sheet pan and oil generously. Press smashed garlic into the flesh of the artichoke halves(cut side). Sprinkle liberally with salt and pepper to taste. *Note: More Salt and Pepper than you think, as some will be lost in the grilling process.
5. Grill Artichokes: With a grill heated to 400-500°F place the seasoned artichokes with the inside facing down on the grill. Close and leave for 3-5 minutes. Check on the grill marks and rotate the artichokes 45 degrees to finish grilling 3-5 additional minutes.
To Serve: While hot, drizzle with Rosemary Honey and serve!
Pro Tip! You can do steps 1-3 and store in the fridge up to 3 days until you are ready to grill. We also love a drizzle of Hot Honey on these garlicky artichokes!
