Warm Potato Salad with Peace Honey

Peace Honey with Warm potato salad


 2 lb (about 5 or 6 medium) red potatoes cut into 1 inch cubes

 2 tablespoons Peace Honey

 1/4 cup extra virgin olive oil

 1/4 cup red wine vinegar

 1/4 cup (or more, to your liking) kalamata olives, chopped

 1/4 cup sun dried tomatoes in oil (or more, to your liking), chopped

 2 stalks celery, chopped

 2 tablespoons fresh basil, chopped

 1 tablespoon of minced garlic


  1. In a large pot, cover potatoes with cold water. Generously season with salt. and bring to a boil. Cook until potatoes are easily pierced with a fork, about 12-15 minutes. Drain and let cool a bit in a large bowl.
  2. In a small bowl, whisk together peace honey, olive oil, and vinegar.
  3. Add olives, tomatoes, celery, and basil and stir.
  4. Pour over potatoes and stir gently until thoroughly mixed. Season with salt and pepper to taste.
  5. Enjoy!

This can be eaten warm, at room temperature, or even cold! It’s up to you.
