Warm Potato Salad with Peace Honey
Ingredients
2 lb (about 5 or 6 medium) red potatoes cut into 1 inch cubes
2 tablespoons Peace Honey
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
1/4 cup (or more, to your liking) kalamata olives, chopped
1/4 cup sun dried tomatoes in oil (or more, to your liking), chopped
2 stalks celery, chopped
2 tablespoons fresh basil, chopped
1 tablespoon of minced garlic
Directions
- In a large pot, cover potatoes with cold water. Generously season with salt. and bring to a boil. Cook until potatoes are easily pierced with a fork, about 12-15 minutes. Drain and let cool a bit in a large bowl.
- In a small bowl, whisk together peace honey, olive oil, and vinegar.
- Add olives, tomatoes, celery, and basil and stir.
- Pour over potatoes and stir gently until thoroughly mixed. Season with salt and pepper to taste.
- Enjoy!
This can be eaten warm, at room temperature, or even cold! It’s up to you.
