Tostada with Chorizo and Tupelo Honey Hot Sauce

Our Tupelo Honey Hot Sauce is so good, you can put it on just about everything. We love to top chorizo tostadas with it. The hot sauce adds a sweet and spicy combination that is as additive as it is delicious. This meal is protein packed thanks to the poached eggs and chorizo. Enjoy it for breakfast, lunch, or dinner. 

Tostada 

Ingredients

2 Cups Canola Oil for Frying

6 Four Inch White Corn Tortillas

Directions

  1. Poor the oil into a small pot on medium heat when hot test with small piece of tortilla to see if bubbles
  2. Add corn tortillas one at a time flipping over after one minute, cook until crispy
  3. Place on a plate lined with a paper towel
  4. Set aside

Guacamole

Ingredients 

½ Small White Onion

2 Plum Tomatoes

3 Avocados

2 Limes

2 Teaspoons Chopped Cilantro

½ Teaspoon Kosher Salt

Directions

  1. Place a medium mixing bowl on a towel so it gives a sturdy base
  2. On a cutting board peel and dice onion into small ¼ inch pieces, add to bowl
  3. Cut the tomatoes in half scoop out seeds and dice into ¼ inch pieces, add to bowl
  4. Slice the avocados in half, take out seed discard and scoop out into bowl
  5. Squeeze limes into the bowl with avocados, with a fork smash the avocados until desired consistency
  6. Add the cilantro and kosher salt and mix well with fork
  7. If needed season with more lime juice and salt

Poached Eggs

Ingredients 

6 Eggs

Medium Pot of Simmering Water

½ Cup White Vinegar

1 Teaspoon Kosher Salt

Directions 

  1. Place pot of water onto stove and add the vinegar and salt bring to simmer
  2. Crack the eggs one at a time into a small bowl or ramekin
  3. With a spoon spin the water around making a vortex
  4. Quickly add one egg and cook for 3-4 minutes until whites are cooked and center is still soft
  5. Take out with slotted spoon and place on a plate with paper towel

Chorizo

Ingredients 

12oz Chorizo

Directions

  1. Place a non-stick pan over medium heat, add chorizo (season to taste) and cook until crispy
  2. Drain off excess rendered fat

You are now ready to build your tostada. Start with spreading the guacamole on each tostada, then add chorizo, and top with poached egg. Finally, pour on a healthy amount of our Tupelo Honey Hot Sauce and enjoy!
