Spicy Cauliflower Tacos with Tupelo Honey Hot Sauce

These Spicy Cauliflower Tacos with Tupelo Honey Hot Sauce make the perfect vegetarian dinner. Made with crispy sautéed cauliflower coated in tupelo honey hot sauce, Queso Fresco, pickled red onions, and cilantro. They are so good no one will miss the meat. 

Ingredients 

1 Head Cauliflower

1 Tablespoon Olive Oil

1 Teaspoon Smoked Paprika

1 Tablespoon Ground Cumin

1 Teaspoon Chili Powder

1 Teaspoon Ground Coriander

1 Teaspoon Kosher Salt

1 Teaspoon Fresh Ground Black Pepper

1 Tablespoon Olive Oil

1/3 cup Tupelo Honey Hot Sauce

¼ cup Queso Fresco or Cotija Cheese

Pickled Red Onions (Recipe Below)

1 Bunch Cilantro Chopped roughly

1 Package 4-inch Corn Tortillas

Directions

  1. Turn the cauliflower upside down. With a small knife cut the florets away and cut into quarter size pieces
  2. Place cauliflower into bowl and add olive oil and toss to coat
  3. Add the paprika, cumin, chili powder, coriander, salt, and pepper toss until well coated
  4. Heat a large sauté pan with 1 tablespoon olive oil
  5. Add the cauliflower and sauté until brown and crispy
  6. Add the Tupelo Honey Hot Sauce and continue to cook for 1 minute just until the cauliflower is coated with the sauce and hot
  7. Heat the tortilla shells in a sauté pan until warm
  8. Lay tortillas flat on a plate then add a teaspoon of cauliflower, pickled red onions, queso fresco cheese and fresh cilantro serve with sliced limes on the side

Pickled Red Onions

Ingredients 

1 Red Onion

½ cup Water

½ cup Red Wine Vinegar

½ Teaspoon Black Peppercorns

1 Bay Leaf

1 Teaspoon Kosher Salt

1 Teaspoon White Sugar

Directions

  1. Peel and slice onion
  2. In a small saucepan add the water, red wine vinegar pepper and bay leaf bring to a boil
  3. Add the salt and sugar to dissolve then add the red onion
  4. Reduce heat to medium and cook for about 5-6 minutes
  5. Take off heat and allow to cool then place in a container and let rest until cold in the refrigerator
