Rice Bowl with Bee Pollen Crusted Sesame Avocado, Kimchi, and Broccoli

Rice Bowl Ingredients (Makes 4-6 Servings)
3 Ripe Avocados
ÂĽ cup Bee Pollen
1 Tablespoon White Sesame Seeds
ÂĽ Cup Sesame Oil
2 Cups Cooked Brown Rice
2 Cups Raw Broccoli Shaved
1 Cup Kimchi
1 Cup Shredded Carrots
1 Cup Shredded Red Cabbage
1 Bunch Scallions Sliced
Honey Ginger Dressing Ingredients
1 Tablespoon Fresh Ginger
1 Shallot
1 Teaspoon Sesame Seeds
1 Tablespoon Black Sage Honey
ÂĽ cup Fresh Squeezed Lime Juice 2-3 limes
½ Cup Rice Wine Vinegar
½ Cup Canola Oil
Salt and Pepper to Taste
Directions
- Make dressing ahead
- Peel ginger, chop add to blender
- Peel shallots add to blender
- Add sesame seeds, honey, lime juice, and vinegar
- Turn blender on slow then to medium
- Slowly add the oil in a steady stream until well combined
Rice Bowl Directions
- Cut the avocados in half and peel off skin, brush the half avocados with sesame oil and sprinkle with the sesame seeds and Bee Pollen to make a crust
- In a serving bowl put about half cup of the cooked brown rice on the bottom
- Then divide the ingredients evenly around the bowl separately
- Place the half avocado on top in the middle and pour the dressing all around the salad
- Garnish with scallions
- Pour dressing over the rice bowl and enjoy!
