Red, White, and Blueberry Pie with Whipped Honey

You’ll have the most patriotic pie at the party with this Red White and Blueberry Pie Recipe! This dessert is super easy to make and ready to impress. Ripe red berries, white Whipped Honey, and bright blueberries are highlighted with the fresh flavors of mint and lemon. We use Whipped Honey Original because it’s perfect for pies and desserts but as always you can use any honey you love.

Ingredients

Crust:

1/2 vanilla bean

6 tablespoons butter

1 teaspoon fine salt

11 graham crackers (2 1/2 x 5 inch)

Filling:

6 cups blueberries (around 3 pints), set some aside for garnish

1/2 cup freshly squeezed orange juice

12 ounces (1 jar) Whipped Honey Original

1 teaspoon lemon zest

1 teaspoon kosher salt

1/4 cup cornstarch

3/4 cup organic heavy cream

1 teaspoon vanilla extract

1/2 cup total red berries for garnish

Directions

Crust:

1.Preheat oven to 350°F. Open the vanilla bean and scrape out the good stuff. In a skillet over medium heat, melt the butter. Remove from heat and stir in the vanilla bean seeds and salt. Let the butter mixture cool slightly.

2.Blend graham crackers in food processor until finely ground. Add butter mixture and pulse until combined. Form mixture into bottom and sides of a 9 inch (preferably deep dish) pie pan. Bake until lightly browned, 12 to 14 minutes. Cool on a wire rack (around 30 minutes).

Filling:

3.Set aside blueberries for garnish. In a saucepan over medium-high heat, heat the orange juice, honey, 1/2 teaspoon lemon zest, and salt. Stir until the mixture comes to a boil. Add the blueberries, cornstarch, and bring to a low boil. Stir constantly and gently mash the berries with the back of a spoon until the berries are broken down and the sauce is thick, about 1 minute. Remove from heat and pour into pie crust. Let the pie cool for 15 minutes. Refrigerate until set, 4 hours or up to 1 day.

To Finish:

4.In a large bowl, and a tablespoon of honey and beat the cream to very soft peaks (do not overbeat!). Sprinkle remaining lemon zest, and vanilla extract into the cream and beat until soft peaks return. Spread whipped cream in center of pie, leaving a 1 inch border of blueberry filling for the blue. Top with reserved blueberries, mint, raspberries, and strawberries in center of pie.
