Orange Blossom Honey Roasted Rainbow Carrots

Tender and sweet orange blossom honey roasted rainbow carrots make the perfect side dish for the holidays or anytime. Easy to prep and simple to roast, this dish adds an extra dash of flavor and color to your plate. 


 2 Bunches Rainbow Carrots Tops on

 1 Tablespoon Olive oil

 1 Teaspoon Kosher Salt

 1 Teaspoon Fresh Black Pepper

 1 Teaspoon Orange Blossom Honey

 Pesto Ingredients

 1 Cup Toasted Pumpkin Seeds

 1 Cup Fresh Basil

 ½ cup Fresh Mint Leaves

 1 Bunch Fresh Parsley

 4 Garlic Cloves

 1 Cup Parmesan Cheese

 1 Tablespoon Fresh Squeezed Lemon Juice

 1 Teaspoon Fresh Squeezed Lime Juice

 1 Cup Olive Oil

 1 Teaspoon Orange Blossom Honey

 ¼ Teaspoon Kosher Salt

 ½ Teaspoon Fresh Black Pepper


  1. Preheat oven to 375 degrees
  2. Cut tops of carrots leaving about 3-4 inches of stem. It is not necessary to peel but you can.
  3. Lay on a roasting pan and drizzle with olive oil, salt, and pepper
  4. Meanwhile in a food processor add the pumpkin seeds and start to pulse
  5. Add the fresh herbs, garlic and citrus juice continue to process
  6. Add the parmesan cheese and olive oil, orange blossom honey, and blend. Season with salt and pepper and process until smooth
  7. Roast the carrots for about 20 minutes until tender drizzle orange blossom honey and put back into oven for last 5-6 minutes
  8. Lay the roasted carrots on a serving platter and spoon the pesto all over the carrots
