Bourbon Roasted Butternut Squash with Acacia Honey

Made with with acacia honey, thyme, pistachios and feta cheese, this dish is the ultimate recipe to add to any dinner table this holiday season. The sweet and savory taste of this butternut squash will leave everyone wanting more.


1 Whole Large Butternut Squash

1 Teaspoon Olive Oil

1 Tablespoon Fresh Thyme

2 Tablespoons Bourbon

2 Tablespoons Acacia Honey

1 Teaspoon Smoked Paprika

1 Teaspoon Cinnamon

1 Teaspoon Coriander

1 Teaspoon Kosher Salt

1 Teaspoon Black Pepper

1 Cup Crushed Pistachios

½ Cup Feta Cheese

½ Cup Fresh Chopped Parsley


  1. Preheat the oven to 375 degrees
  2. Peel and cut the butternut squash into 1-inch cubes discarding the seeds
  3. In a mixing bowl combine the olive oil, thyme, bourbon, acacia honey, and spices, mix well
  4. Toss the butternut squash with the mixture then add to a roasting pan
  5. Roast for about 30 minutes until fork tender
  6. Place the squash into a serving bowl then top off with pistachios, feta cheese and parsley
