Ancient Grain Salad with Acacia Honey

We made this hearty fall side dish with Einkorn, Nature’s first and oldest wheat. Thousands of years before supermarkets began selling highly-processed flour, families gathered around meals created with this superior ancient grain. Gather your family and enjoy!


 1 Cup Tri Color Quinoa

 1 Cup 7 grain Wild Rice

 1 Cup Farro

 1 Cup Einkorn

 8 Celery Ribs

 1 Bunch Parsley

 1 Cup Goji Berries

 2 Cups Pecans

 ½ Cup Red Wine Vinegar

 1 Shallot

 1 Teaspoon Kosher Salt

 1 Teaspoon Fresh Pepper

 ¼ Cup Acacia Honey

½ Cup Canola Oil


  1. Cook the quinoa, wild rice, farro and einkorn according to the manufacturer’s directions
  2. When cooked drain of any excess water then lay out on a sheet pan to cool completely
  3. Dice celery about ¼ inch pieces add to a mixing bowl
  4. Clean and chop parsley fine then add to bowl. Add the goji berries and pecans to the same bowl
  5. Once the grains have cooled add them to the bowl
  6. In a blender add the red wine vinegar, shallot, salt, pepper, and acacia honey
  7. Put blender on low speed and drizzle the oil in a slow steady stream until blended
  8. Toss all ingredients with dressing until well dressed
  9. Serve in a bowl and enjoy!
