Ancient Grain Salad with Acacia Honey
We made this hearty fall side dish with Einkorn, Nature’s first and oldest wheat. Thousands of years before supermarkets began selling highly-processed flour, families gathered around meals created with this superior ancient grain. Gather your family and enjoy!
Ingredients
1 Cup Tri Color Quinoa
1 Cup 7 grain Wild Rice
1 Cup Farro
1 Cup Einkorn
8 Celery Ribs
1 Bunch Parsley
1 Cup Goji Berries
2 Cups Pecans
½ Cup Red Wine Vinegar
1 Shallot
1 Teaspoon Kosher Salt
1 Teaspoon Fresh Pepper
¼ Cup Acacia Honey
½ Cup Canola Oil
Directions
- Cook the quinoa, wild rice, farro and einkorn according to the manufacturer’s directions
- When cooked drain of any excess water then lay out on a sheet pan to cool completely
- Dice celery about ¼ inch pieces add to a mixing bowl
- Clean and chop parsley fine then add to bowl. Add the goji berries and pecans to the same bowl
- Once the grains have cooled add them to the bowl
- In a blender add the red wine vinegar, shallot, salt, pepper, and acacia honey
- Put blender on low speed and drizzle the oil in a slow steady stream until blended
- Toss all ingredients with dressing until well dressed
- Serve in a bowl and enjoy!
