Honey Marinated Chicken


1 chicken, about 4 1/2lbs or 6 chicken legs
salt and pepper
3 tbsp Savannah Bee Company Orange Blossom honey
2 tbsp soy sauce
2 tsp coriander seeds, crushed
1 packet powdered saffron, or 10 saffron threads
1 onion, chopped
1 large tomato, chopped
1 tsp salt
juice 1 lime
1/4 cup butter


Cut whole chicken into 6 pieces. Place the pieces in a shallow dish and season well.

Blend or process together the honey, soy sauce, corinander seeds, saffron, onion, tomato and salt. Spread this mixture over the chicken pieces and leave to marinate for at least 6 hours, or overnight, in a cool place.

Lift the pieces out of the marinade and broil (or grill) or barbecue them, turning regularly until cooked through and the juices run clear if tested with tip of a knife. Strain the marinade into a pan with the lime juice. Heat to boiling, then remove from the heat and beat in the butter bit by bit with wire whisk to thicken the sauce.

Serve with risotto or new potatoes. Serves 4-6.
