Honey Balsamic Pork Medallions

Makes 4 servings


8 center-cut thick pork chops, boneless, all visible fat removed
1 egg
1/2 cup sesame oil
1 cup balsamic vinegar
1/4 cup Savannah Bee Orange Blossom honey
1 Tablespoon A-1 poultry sauce
2 teaspoons light salt
1/4 teaspoon freshly ground black pepper
Minced parsley

Arrange medallions in 9 x 13 x 2-inch baking pan. In small bowl, beat egg; add oil and beat again. Stir in vinegar, honey, A-1 Sauce, salt and pepper. Using fiber brush baste medallions with sauce. Bake at 350°F for 50 to 60 minutes or until tender; turn and baste medallions every 15 minutes. Spread with any remaining sauce during the last 15 minutes. Place on warmed platter. Sprinkle with paprika and parsley to taste. *Any light honey may be used.
