Brussels Sprout Coleslaw with Lavender Honey Recipe

This delicious new Brussels Sprout Coleslaw and Lavender Honey Recipe makes Clean Eating easy and enjoyable.  Packed with vitamins C and K,  Brussel Sprouts also contain sulforaphane, “a phytochemical under basic research for its potential anticancer properties” according to the Wiki page.  As always – avoid overcooking these cute little leafy greens to maintain key health benefits.

 

Brussels Sprout Coleslaw

1 Pound Brussels Sprout –  finely chopped or shredded in a food processer

1/2 Apple – finely chopped

1/3 Cup Sunflower Seeds

1/3 Cup Cranberries

1/3 Cup Parmesan Cheese

Lavender Honey Dressing

1/4 Cup Olive Oil

2 Tbsp White Wine Vinegar

1 tsp Brown Spicy Mustard

1 Tbsp Lavender Honey

1 tsp Garlic Powder

1/4 tsp Salt

Mix all coleslaw ingredients in a large bowl. Set aside. Put all dressing ingredients in separate, smaller bowl and whip well. Coat Coleslaw with dressing and combine. Enjoy!
